My neighbors have a fire pit in the backyard and we regularly gather around and light a few logs. About half of the time, this leads to s’mores. It’s practically impossible for me to sit beside a live fire and not crave an ooey, gooey s’more.
I, on the other hand, do not own a fire pit and never have. Recently, a grill-out with friends was approaching and I couldn’t get s’mores out of my head. I wanted an easy dessert to serve a crowd after spending an hour or two standing over the grill, but I still wanted to wow them.
S’mores sliders were born. They require just a few ingredients and mere minutes to assemble and warm up. I’ve included instructions for making them in an oven, too, so anyone can enjoy these craveable, shareable dessert sliders all year long.
Party-Ready S’mores
S’mores are a total crowd pleaser, but they’re not party-friendly unless your party happens to be a beach bonfire. Everyone needs to be able to fit around the fire with their marshmallow on a stick, otherwise you get a bottleneck of guests awaiting dessert.
Sure, you can make a batch of s’mores cookies ahead of time, but what if you didn’t plan ahead? And what if you want that warm, gooey sensation that’s characteristic of a s’more? Try this s’mores slider recipe.
They take minutes to make and are infinitely easier to serve than actual s’mores. They serve a small crowd, are easy to double for a big one, and are a great way to use up the residual heat on your grill after a cookout. They’re also super cute, sure to please kids and adults alike.
Tips for Grilling Success
The key to success with s’mores sliders is temperature. It’s the trickiest part, achieving toasted buns and melted chocolate without burning, but it’s also what I love most about the recipe. It’s the perfect dessert to make after you’re done grilling dinner. You want low heat, so nearly-spent coals that are no longer hot enough to grill burgers or dogs are perfect.
Once your charcoal is on its last life, push the coals to one side of the grill and use the cool side to toast the sliders. Check them often and rotate them if needed—they’ll only take a few minutes, even on a cool grill. For gas grills, heat to low heat, add the sliders, and turn off the gas. The residual heat will be enough to toast the buns and melt the chocolate and marshmallows without burning.
How to Make S’mores Sliders in the Oven
If you don’t have a grill handy, you can use your oven to make these s’mores sliders. Preheat the oven to 350°F and prepare the sliders according to the instructions. Place the whole lined baking sheet in the oven and bake just until the chocolate is melted, about 5 minutes. Add the top of the buns and serve.

Grilled S’mores Sliders
If you’d rather use bar chocolate for this recipe, give it a good chop before adding so that it melts evenly.
Ingredients

1 (12-ounce) package King’s Hawaiian sweet rolls

1 1/3 cups (8 ounces) milk or semi-sweet chocolate chips

2 cups (3 ounces) mini marshmallows

1 tablespoon melted butter, optional

1 full sheet graham crackers, crushed into fine crumbs, optional

Flaky sea salt, optional
Method

Preheat the grill:
Heat the grill to low heat (300 to 325°F). If you’ve been using your grill, adjust the heat accordingly. If needed, clean the grates.
Tip
If you’re using a charcoal grill, make these when the coals are nearly spent. You should be able to hold your hand 5 inches above the grill for 8 to 10 seconds without needing to pull it away. Push the coals to one side of the grill so you have a cool zone for toasting the sliders and replace the lid.

Prepare the rolls:
Use a serrated knife to slice the rolls in half, like little hamburger buns. You should have one big slice with all of the bun tops attached and one with all of the bottoms. Lay them open like a book and place them on a sheet of aluminum foil set on top of a flat baking sheet.

Assemble the sliders:
Sprinkle the bun bottoms with an even layer of the chocolate chips, using about 2/3 of the chocolate. Top with the mini marshmallows, followed by the rest of the chocolate. Leave the top half of the buns alongside on the foil, cut side up.

Grill the sliders:
Take the baking sheet to the grill and carefully slide the sheet of aluminum foil with the bottom and top halves of the rolls onto the grill. The aluminum foil should be directly on the grill grates—the baking sheet is just there to help you transport them.
Close the lid. If you’re using a gas grill, turn off the heat and the gas. For a charcoal grill, make sure you’re using coals that have cooled considerably and that the sliders are on the cool end of the grill. Use the residual heat to grill until the chocolate is melted, the marshmallows are soft, and the bread is lightly toasted, 4 to 10 minutes.
Tip
If using a charcoal grill, check the sliders once or twice to make sure the buns don’t burn, rotating the foil if needed.

Remove from the grill:
Carefully slide the flat baking sheet back under the foil, using an oven-mitted hand or spatula to help. Immediately place the top half of the buns on top of the bottom, pressing lightly to adhere.
If using, paint the tops of the buns with the melted butter and sprinkle with the graham cracker crumbs, followed by a light sprinkling of flaky salt.

Serve:
These are fun to serve in one big piece, letting guests reach in and pull them apart themselves. Or you can use a big knife to cut the rolls apart, then transfer them to a serving platter. Serve while they are still melty and warm.
Slider s’mores do not keep well, so it’s best to enjoy them all within an hour or so.
